The Programme
Who can resist the smell of freshly baked bread? This certificated course covers a range of professional pastry and confectionery techniques covering products such as hot and cold desserts, cakes, pastry and dough products.
Suitable for students aged 16 and over. Please ring to enquire about any exceptions.

There are no formal entry requirements but a good standard of English and a basic cooking ability and knowledge would be an advantage.

What is CERTIFICATE IN GENERAL PATISSERIE & CONFECTIONERY LEVEL 2?
This professionally recognised certificated qualification is aimed at anyone who has a very keen interest in patisserie and confectionery. It is a practical based course taught within our professionally equipped kitchens.
Are there any entry requirements?
There are no formal entry requirements but a good standard of English and a basic cooking ability and knowledge would be an advantage.
How long will it last?
Two terms - starts January 2012 to July 2012.
Who is the course for?
This course is suitable for anyone who has a keen interest in patisserie and confectionery and may wish to enter employment within this area. The course would also be suitable for the amateur enthusiast who wishes to upgrade their baking techniques.
What is the course content?
This practical course covers a range of delicious subjects including; hot and cold desserts, cakes and sponges, pastry and dough products. It also explores key food safety and hygiene practises.
How will it be assessed?
You would be expected to produce a portfolio of evidence covering a range of products and will have complete a short examination to demonstrate knowledge and understanding.
What are the fees and are there any additional costs?
Students would be expected to wear appropriate clothing within the kitchen such as basic chef's whites. There would also be some costs for ingredients depending on product. Approximate cost per session £2.50.
What is the progression route?
Successful candidates may be eligible for progression onto Level 3 patisserie qualifications or equivalent or relevant employment within the industry.
