Former Apprentice teaches the next generation of trainee chefs

Anthony Williams came to Petroc as an Apprentice in 1976 to train to become a chef and now, years later, Anthony is back at college teaching the next generation of Apprentice Chefs.

Having worked at Trust House Forte, the worlds biggest hotel company in the world at the time, and then at various top restaurants over the years, Anthony has plenty of experience in the hospitality and catering industry which he now hopes to pass on to his students.

Anthony also has top awards such as the British Meat Pub Chef of the Year and national ‘Big Cheese’ Competition winner under his belt. As such he has been pleasantly surprised to have found a new challenge in teaching.

“I feel I’ve got a lot to give. I have always really enjoyed being a chef and have even won nationally recognised awards and so I never thought I’d find a job where I would get even more job satisfaction.”

As a Commercial Catering and Institutional Catering Tutor, over half of the students Anthony teaches are Apprentices so he is able to pass on his expertise to these learners who develop skills at College which they then take back and perfect in the workplace.

“I truly believe that an Apprenticeship is the best way to learn as you’re learning in the real world for real people and come in to college to hone your skills.”

Anthony teaches his learners both the basics and more complicated dishes in the College’s fully equipped training kitchens, enabling them to develop rounded skills that are essential for the demands of a busy kitchen.

He also assesses their skills in the workplace which is where the proof of the pudding really lies.

“I support all of my students even after they finished their training and they know that they can contact me anytime if they need help or advice.”

Anthony is a fantastic example of how far an Apprentice can go from their initial training and as a past Apprentice he is able to fully understand the benefits of this type of training.
