Do you love food and have a passion for cookery and customer service? Then this is the study programme for you.
This one year qualification has a proven track record of providing students with the skills and knowledge to develop highly successful careers in the dynamic and exciting world of hospitality and catering.
This is the progression course from Level one.
You will be taught by award-winning Chefs, watch demonstrations by industry specialists, and visit a range of businesses (including a vineyard).
We have a 100% pass rate with a very high rating of enjoyment.
On this practical programme, you will develop your talents through working in our commercial kitchens and contemporary restaurant.
You will cover topics including:
- Pastry and Dough
- Meat, Fish and Vegetable Cookery
- Wine Appreciation
- Table Theatre Techniques
- Cocktail making
- Realistic work environments including front of house and kitchen.
Work experience will form part of the programme.
You will also have support for competition work including Young Chef of the Year and Ray Kenny Bursary - where learners can win up to £2000.
The programme is assessed with a mixture of continuous practical assessments and assessed written assignments.
The course uses modular units so you can track your completion of course.
All entrants must hold 4 GCSEs at grade 3 or equivalent or above, to preferably include GCSE Maths and English at grade 3 or above.
Entrants who do not have a GCSE grade 4 in Maths and/or English will continue studying these subjects.
At the end of the year, you are expected to have completed and achieved all the components of your Level 2 Study Programme and improved your Maths and English skills before progressing to your next course.
You will need to successfully complete the Level 1 course to a high standard in order to be considered for this Level 2 programme.
On successful completion of the Level 2 programme, you can progress to an advanced apprenticeship or to employment as a professional trainee chef/waiter. Level 3 Apprenticeship in either Professional Cookery or Food & Beverage Supervision are also available. Day release programmes are based at Tiverton campus.
The department has a well-equipped kitchen and a modern, fine dining restaurant, The Exe, in which students develop their cookery and food service skills.
The college has dedicated learning resource areas with bookable computers for learners to use during self-study time. There is a well-stocked college library available to support learners.
You will be required to bring in your uniform, chefs knives, paper & pen.
You will need to have a uniform and knives - however you should be fine to use the ones you had at Level one, just replacing any uniform that has worn out.
