Love food and have a passion for cookery and customer service? Then this is the study programme for you. This one-year qualification has a proven track record of providing students with the skills and knowledge to develop highly successful careers in the dynamic and exciting world of hospitality and catering. The course develops a range of employability skills and is supported by industry experts
You will gain culinary skills and food service techniques to help you succeed as a professional chef or restaurant supervisor either locally, nationally or overseas.
On this practical programme, you will develop a range of practical skills in various culinary areas such as:
- pastry and bread making
- meat, fish and vegetable cookery
- cocktail making
- barista skills
...and much more.
You will develop your talents through training in our new, state-of-the-art kitchens and contemporary restaurant. The course comprises of two qualifications; professional cookery and professional food and beverage. Both qualifications can be completed in one academic year.
Work experience forms part of the programme and there may even be opportunities to experience food and culture in another European country. Overt the last two years, our catering students have had the opportunity to carry out a successful two week work practice and team work programme in Gothenburg, Sweden. As well as work practice, practical workshops and theory lessons all of our students also have the opportunity to gain culinary expertise from high end fine dining, Michelin starred chefs through participating in our culinary evening events.
The programme is assessed with a mixture of continuous practical assessments, assessed written assignments and a practical examination.
All entrants must hold 4 GCSEs at grade 3 or equivalent or above, to preferably include GCSE Maths and English at grade 3 or above.
Entrants who do not have a GCSE grade 4 in Maths and/or English will continue studying these subjects.
At the end of the year, you are expected to have completed and achieved all the components of your Level 2 Study Programme and improved your Maths and English skills before progressing to your next course.
On successful completion of the Level 2 programme, you can progress to the Level 3 Diploma in Advanced Professional Cookery, an advanced apprenticeship or into employment as a professional trainee chef/waiter.
The state-of-the-art Lifestyle and Tourism Centre, which opened in 2016, is home to Petroc's public-facing facilities and provides students with opportunities to engage with customers and work in a realistic industry setting.
The Taw Restaurant, with its stunning views across Barnstaple, gives hospitality and catering students the chance to engage with customers and hone their skills in the industry-standard training kitchens.
You will need to purchase kitchen and restaurant uniforms, knives and books. This will be discussed at interview.

Q: Is there evening work as part of the course?
A: Yes. As part of the course and in preparation for industry, students work in our public restaurant for one evening each week.
Q: Will I need to purchase any equipment?
A: Yes, you will need to purchase a kitchen and restaurant uniform, knives and books.
Q: Is there any financial help available?
A: Yes. Qualifying students can apply for support from the College Learner Support Fund which is means tested.
