Do you love food and have a passion for cookery and customer service? Are you looking to develop professional skills and knowledge in the Catering and Hospitality Industry? Then this is the course for you!
The Hospitality and Catering Industry is one of the largest industries here in North Devon and The South West, so whether you want to stay local or work further afield, there are excellent employment opportunities in the field of hospitality and catering.
This qualification has a proven track record of providing students with the skills and knowledge to develop highly successful careers in the dynamic and exciting world of hospitality and catering.
This programme includes two qualifications; Technical Diploma in Professional Cookery Level 2 and Diploma in Food and Beverage Level 2.
This fast-paced course covers the following units:
– Poultry and meat preparation and cookery
– Fish preparation and cookery
– Modern presentation techniques
– Patisserie and confectionery techniques and products
– Wine and food appreciation
– Table theatre
– Mixology and barista skills
– Customer and restaurant service skills
As well as culinary skills, you’ll learn important theory too, such as health and safety, cookery techniques and methods, nutrition and food as a commodity.
Work experience forms part of the programme and there may even be opportunities to experience food and culture in another European country. Over recent years, our catering students have had the opportunity to carry out a successful two-week work practice and team work programme in Gothenburg, Sweden. As well as work practice, practical workshops and theory lessons, all of our students also have the opportunity to gain culinary expertise from high-end fine dining Michelin starred chefs, through participating in our culinary evening events.
The course develops a range of employability skills and is supported by industry experts.
The programme is assessed with a mixture of continuous practical assessments, assessed written assignments and a practical examination.
All entrants must hold four GCSEs at grade 3 or equivalent (or above), preferably including GCSE Maths and English. If you do not have a GCSE grade 4 in Maths and/or English you will continue studying these subjects alongside your chosen course(s). At the end of the year, you are expected to have completed and achieved all the components of your Level 2 Study Programme and improved your Maths and English skills before progressing to your next level course
On successful completion of the Level 2 programme, you can progress to the Level 3 Diploma in Advanced Professional Cookery, or an apprenticeship. With the North Devon Hospitality and Catering industry on our doorstep, learners may pursue employment opportunities direct form the course, either in professional kitchens, or as front of house staff.
Facilities and resources
Our state-of-the-art Lifestyle and Tourism Centre is home to Petroc’s public-facing facilities and provides students with opportunities to engage with customers and work in a realistic industry setting.
Practical Cookery is delivered and practised in our modern industry-standard kitchens and will introduce you to the use of modern cookery technology.
The Taw Restaurant, with its stunning views across Barnstaple, gives hospitality and catering students the chance to engage with customers and hone their skills in the industry-standard training kitchens.
Q: Is there evening work as part of the course?
A: Yes. As part of the course and in preparation for industry, students work in our public restaurant for one evening each week.
Q: Will I need to purchase any equipment?
A: Yes, you will need to purchase a kitchen and restaurant uniform, knives and books.
Q: Is there any financial help available?
A: Yes. Qualifying students can apply for support from the college Learner Support Fund which is means tested.
Every full-time student at Petroc will have their own Study Programme which will include:
– Your academic or vocational qualification.
– Maths and English Language development – if you have not achieved GCSE grade 4 in either of these subjects.
– Work Experience – hours will vary depending on your qualification and course level.
– Tutor Support – to support your personal, academic and professional development.
– Sustainability – helping you to identify how you can improve the sustainability of your future employment sectors.
– Personal Development Awards – developing six key areas of personal and employability behaviours to prepare you for the working world.
