Hospitality & Catering

Hospitality and catering is an industry with all kinds of employment opportunities, and if it appeals to you, this study programme should serve up just the start you need, with plenty of hands-on catering practical experience.

On this programme you will be studying two qualifications: Professional Cookery Level 1 and Food and Beverage skills Level 1; both of these qualifications are awarded by City and Guilds.

Whilst studying you will gain practical skills in a professional kitchen and restaurant environment.

You will cover a range of topics from:
– Basic meat and fish cookery
– Pasta and rice dishes
– Cake, desserts and dough products
– Barista coffee making skills
– Customer service skills
– Bar service skills
– Teamwork skills

As well as practical experience, you will also gain knowledge through theory in a range of subjects such as:
– Food safety
– Customer service
– Food preparation and cookery techniques
– Employability skills

Real work experience to enhance employability also forms part of the programme in our new, modern commercial kitchen and restaurant.

You will also be given an opportunity to gain a food safety certificate and will have a designated personal tutor.

Course details

Assessments

Continual practical assessments are part of the programme; you will also have to complete short-answer questions and small assignments throughout the year. You will be given full guidance and support to help you with your assessments.

Entry Requirements

You must hold four GCSEs at grade 2 or equivalent (or above), preferably including Maths and English. If you do not have a GCSE grade 4 in Maths and/or English, you’ll continue studying these subjects alongside your chosen course(s). At the end of the year, you are expected to have completed and achieved all the components of your Level 1 Study Programme and improved your Maths and English skills (where applicable) before progressing on to your next course.

An interest in cooking would be an advantage!

Progression

Upon successful completion of this course, you may wish to progress to our Level 2 Hospitality and Catering programme or apprenticeship. It is also ideal for anyone seeking a trainee position in the hospitality and catering industry.

Our state-of-the-art Lifestyle and Tourism Centre, is home to Petroc’s public-facing facilities and provides students with opportunities to engage with customers and work in a realistic industry setting.



The Taw Restaurant, with its stunning views across Barnstaple, gives hospitality and catering students the chance to engage with customers and hone their skills in the industry-standard training kitchens.

Q: Will I need to purchase any equipment?

A: Yes, you will need to purchase kitchen and restaurant uniform, knives and books.



Q: Is there any financial help available?

A: Yes, qualifying students can apply for support from the college Learner Support Fund which is means tested.

Study Programme

Every full-time student at Petroc will have their own Study Programme which will include:

– Your academic or vocational qualification.

– Maths and English Language development – if you have not achieved GCSE grade 4 in either of these subjects.

– Work Experience – hours will vary depending on your qualification and course level.

– Tutor Support – to support your personal, academic and professional development.

– Sustainability – helping you to identify how you can improve the sustainability of your future employment sectors.

– Personal Development Awards – developing six key areas of personal and employability behaviours to prepare you for the working world.
