Chef de Partie – Skills Bootcamp

Skills Bootcamps are free, flexible courses of up to 16 weeks, giving people the opportunity to build up sector-specific skills and fast-track to an interview with an employer. 

This Chef de Partie course will be delivered in person in our purpose-built training kitchens on the main campus in North Devon. You will gain an introduction to the practical skills in a range of cooking techniques.

These will include:
– Meat dishes with relevant sauces
– Poultry dishes with relevant sauces
– Fish & shellfish dishes with relevant sauces
– Soups
– Hot, cold, and frozen desserts
– Patisserie
– Biscuits, cakes & sponges
– Dough products
– Breads
– Vegetarian/vegan dishes

You will also work towards the Level 2 Food Safety at Work Certificate.

You will have access to a wide range of support provided by the College. This includes wellbeing support, careers information, advice and guidance and access to our health and fitness, library and other facilities.

Please note that there are two courses: Monday course or Tuesday course. Please ensure you select the correct code when applying:

Monday course – select PTB674: This 12-week course runs every Monday at 9.00am to 4.00pm. It starts on Monday 16 September and runs until Monday 9 December.

Tuesday course – select PTB674B: This 12-week course starts on Tuesday 17 September and runs until Monday 9 December. Weeks 1-10 will run every Tuesday from 2.00-8.45pm; weeks 11 and 12 will run on Mondays from 9.00am-4.00pm and will consist of the Food Safety Certificate element of the course.

Assessments

There will be no formal initial assessment, assessments throughout the sessions will be based off the finished plated pieces of food that they produce with verbal feedback

Progression

Completion of this Skills Bootcamp is designed to lead into further training and employment in the hospitality and catering trade enter a professional kitchen as a trainee/commis chef.
