Diploma in Professional Cookery

This culinary course is aimed at anyone who wishes to develop their cookery skills or is considering a change in career. The course develops professional cookery skills in areas such as pasta, bread making, pastry and dessert, fish prep and cookery, sauces, meat dishes and contemporary finishes.

The workshops take place in our state-of-the-art commercial kitchens and all of our lecturers are experts in their field with a wealth of professional experience to share.

Units covered in this programme include:
– Health and safety in catering and hospitality
– Catering operations, costs and menu planning
– Prepare and cook stocks, soups and sauces
– Prepare and cook fruit and vegetables
– Prepare and cook meat and offal
– Prepare and cook poultry
– Prepare and cook fish and shellfish
– Prepare and cook rice, pasta, grains and egg dishes
– Produce hot and cold desserts and puddings
– Produce paste products
– Produce biscuit, cake and sponge products
– Produce fermented dough products

All of these subject areas are taught practically with a short theoretical element attached to each unit.

Course details

Assessments

The practical assessments take place within our professionally equipped kitchens. You will also have to complete some written, short-answer question – you will receive expert teaching to support this both practically and theoretically.

Entry Requirements

A basic knowledge and skill of food preparation and cooking methods would be an advantage.

Progression

On successful completion of the Level 2 you will have the opportunity to progress your skills further and apply for the part time course Level 3 in Professional Cookery.

Facilities and resources

The campus facilities include a wide range of professional kitchen equipment including induction hobs, thermomix, sous vide and professional combination ovens. The college also has a fully stocked library and IT facilities.

Q: Is this a recognised qualification?

A: The Level 2 Professional Cookery (City and Guilds) is nationally recognised to be an excellent qualification.



Q: Will I need to bring any ingredients?

A: No, all of the ingredients are covered in the fees. You will have the opportunity to purchase any items you make and of course tasting is free!
